SOTO BETAWI






Ingredients :
500 grams of beef brisket
1 liter of water to boil
250 grams of cow tripe, boiled
250 grams of lung, boiled
500 ml thick coconut milk from 1 coconut
2 stalks lemongrass, crushed
4 bay leaves
6 lime leaves
8 seed cloves
1 nutmeg, crushed
2 cm ginger, crushed
4 cm cinnamon sticks
right amount of oil

Softened seasoning :
4 large red chilies
10 red onions
6 garlic
1 teaspoon salt
1/2 teaspoon ground pepper

complementary:
4 fresh tomato slices according to taste
2 tablespoons sliced ​​green onion
1 tablespoon chopped celery
4 tablespoons of fried onions
chips, soy sauce, and lime

Boiled chili :
10 red chili
1 large red chilli
2 cloves of garlic
1 teaspoon salt

How to make :

  1. Beef stew together lemongrass, bay leaves, orange leaves, cloves, nutmeg, ginger and cinnamon until half cooked meat. lift the meat, cut into cubes and set aside the broth.
  2. Heat 2 tablespoons of cooking oil, fry the spice paste until fragrant, then remove from heat.
  3. Seasoning mix stir in the stock and re-insert pieces of meat and milk, and cook until the meat is tender and the flavors mingle, lift.
  4. Boiled tripe and lung separately until tender. remove and set aside. when will be served fried in hot oil briefly and cut into cubes.
  5. Prepare a bowl, arrange tripe, lungs, meat and tomato slices, pour the soup. sprinkle with chopped green onions, celery, garlic fries, chips soy sauce, lime, and chili. serve while warm.
